Who is behind the food at Waves?
Born in Naples in 1977, Raffaele Lenti grew up breathing the smell of a kitchen. That early pull led him to train at the Istituto Alberghiero in Ottaviano Vesuviano, and his first jobs in the streets of his own city shaped him as a cook.
But it was in Rome that his career turned. The elegant dining rooms of luxury hotels became his new kitchen. There Raffaele discovered a refined, cosmopolitan world of cooking that stretched him professionally and pushed him past his own limits.
He still works with that same energy today, building dishes that tell a story and stay with you. For Raffaele, cooking is not just a job — it is a mission: to share what he loves with other people.
His cooking travels beyond Waves, too: he is the resident chef on Geo , on Italy's Rai 3, and the author of Uno chef a casa vostra ("A Chef in Your Home").

The restaurant opens at 7 pm. Raffaele Lenti’s kitchen and the steakhouse — the Maturmeat® cabinet and the Josper oven — share the same room, with a list of 500 wines and Champagnes built to match both.
Upstairs there is a sea-view terrace, reserved for private events and celebrations. It is not part of the regular dining service. See what we serve.
