On 14 February, from Waves.<\/strong> A dinner in Gaeta on Lungomare Caboto, with Chef Raffaele Lenti's kitchen: fish from the Formia auction, beef aged in the Maturmeat\u00ae cabinet and cooked in the Josper, and a list of more than five hundred labels.<\/p>\n

What an evening<\/h2>\n

The dining room is deliberately plain: tables without cloths, low lighting, the charcoal grill in view. This is not the restaurant of heart-shaped decorations \u2014 it is the restaurant of every other night, on an evening when the kitchen works to a single menu and the room keeps a different rhythm.<\/p>\n

People who eat here on 14 February usually come back at other times of the year: that is why the evening is built around the food rather than the staging.<\/p>\n

The evening menu<\/h2>\n

The Valentine's menu changes every year, because it is built on what the season gives and on what the auction lands in those days. It is published on this page in January<\/strong>\u2014 with the dishes, how to book and the terms of confirmation.<\/p>\n

It is the evening of the year that fills up first. Seats are limited to one dining room and requests start coming in from January: it is worth moving as soon as the menu is published.<\/p>\n
